Beans and Weiners Waikai

This recipe for Beans and Wieners Waikai is perfect for Memorial Day picnics or barbecues or any kind of large gathering.  It is a recipe I found and of course I added more of what I liked and a few other things too to make it even better.

Beans & Weiners Waikai

2 T Butter
1/2 C Onion Chopped
1/2 C Green Pepper Chopped
1 Sm Can Pineapple Rings
1 20 oz. Can Pineapple Chunks
1 Jar Maraschino Cherries
1 Pkg Beef Wieners, Cut in Chunks
2 T Vinegar
1 T Soy Sauce
1/3 C Catsup
1/3 C Barbecue Sauce
1 1/2 - 2 C Brown Sugar (to taste)
4 Cans Pork n Beans
Optional: 1 Can Mandarin Oranges

Drain Pineapple Juice and reserve for later.  In saucepan melt butter.  Saute' green pepper, onion, pineapple, wieners, cherries, and mandarin oranges in butter.  Simmer 5 minutes.  Add pineapple juice, vinegar, soy sauce, catsup, and brown sugar.  Heat until bubbly.  Pour pork n beans (I usually drain at least 2 of the cans and pour all contents of the other two) in crock pot or Very Large Casserole Dish.  Add fruit and wiener mix.  Stir gently to blend.  Place Pineapple rings on top of beans (can place a few cherries inside the rings if desired).  Bake at 350° for 1 hour in oven or bake on high 3-4 hours in crockpot.
