Never Fail 1 Dish Meatloaf and Potatoes
1 lb hamburger
1 Onion Diced
1 1/2 C to 2 C Picante Sauce
1 - 2 sleeves of Saltine Crackers
1 Bottle Sweet Sugar Ray Barbecue Sauce
Clean and slice potatoes into bottom of pan or crockpot. I like to leave the peels on. I like to mix most of the onion in with the potatoes. I save some for the meat. Mix the raw hamburger with rest of the onion, Picante Sauce, and 1 egg. Add enough cracker crumbs to absorb the liquid in the meat. I try to find a medium balance between wet and dry. Place the meat in loaf shape or round shape over the potatoes. Don't work the meat mixture too much or will affect the texture. Pour barbecue sauce over the top of the meatloaf. Bake at 350° for 1 hour in oven or for 3 hours on high in the crockpot. Serves 4-6. Tastes great served with a tossed salad on the side. This recipe can easily be doubled.
