Recipe for Texas Green Beef Enchilada Casserole

This is a quick and easy meal that is good and  hearty for a hard cold day or any day. Enjoy! This is good with chicken as well. I will add as a note...avoid using venison at all costs...also don't take an experiment like that to a church social before trying it first. (Lol). Can you say Disaster with a capital D!

Texas Green Beef  Enchilada Casserole

I lb Ground Beef
1 onion (chopped)
2 cans Refried Beans
1 can cream of chicken soup
1 1 lb Velveeta 
1 C milk
1 can chopped Green chilies
1 pkg flour tortillas
* 1 C Picante Sauce

Brown the hamburger and add chopped onion in skillet. Drain.  Add refried beans to meat and mix well.  Fill tortillas with meat mixture and roll into enchiladas. Place in 13 x 9 baking pan.

Dice Velveeta cheese into microwave proof dish.  Add milk. Cook on high until melted. Stir well. Add soup and green chilies. Mix well. Pour over the filled tortillas. 

*If you like your meals a bit on the spicy side you can also add anywhere from 1/2 C to 1 C Picante sauce to your cheese sauce (depending on how spicy you like it).

Bake for 30 - 45 minutes at 350°.

Well, cold is definitely what we have here! This does seem simple. I have some ground beef in the freezer. Definitely need to try because my girls are tired of spaghetti and I need something new to fix. Have you substituted anything for the green chilies before?

I have used Picante sauce or any kind of salsa instead of the green chilies. A friend of mine likes to put pimento in her casserole or you could leave them out completely if you like. I think that onion would be good too if you liked that idea better.
