Quick and Easy Soup


When we have cool days like today then sometimes I like to make a quick pot of soup for supper.  I have the perfect quick and easy recipe that my family loves and I thought I would share it with you.

 The beauty about this recipe is that it can turn out different every single time you make it or it can be exactly the same.  Your choice.  The first ingredient is 1 pound of any kind of cooked meat you like.  I used hamburger.  Be sure it is browned or cooked before you add your other ingredients.
I drain and rinse my meat after it is cooked.  This eliminates the extra grease and makes my soup more heart healthy.
The next step is to add to the meat any kind of vegetables that you like.  They can be frozen, fresh, or canned. (If you add fresh you will need to add extra cooking time).  For my soup today I wanted it to be more like a Texas Taco Soup so I added a large can of Ranch Style Beans, 1 can Green Beans, 2 cans of Diced tomatoes, 1 can corn, and 1 can green chiles.  I add the liquid too from the vegetables.  
The next ingredient is 1 box of Hamburger Helper of any kind.  I used Cheeseburger Macaroni this time.  Add the seasoning, and the noodles.  

Then add twice the amount of liquid called for on the package.  You can add the milk to make it creamier but I usually just use water.  You can also add broth.  For this soup I used only water.  If you use fresh or frozen vegetables you may need to add a bit more liquid.

Cook on medium heat until noodles and vegetables are cooked.  Season with salt and pepper or mixed seasoning of your choice as needed.
Yummo!  I like to serve this soup with some tortilla chips if we have them (I like cheeze its in this too) and some grated cheddar cheese to sprinkle on top!   The possible combinations for soup are endless because you can use any kind of hamburger helper and any kind of vegetables and meat.  Sometimes it is taco soup, Italian soup, pink soup, fish,sausage, beef, chicken, etc  You get to choose.  The best thing is that it always turns out good and it is so quick and easy.
